As with all applications on MacOS, to uninstall MATLAB drag the MATLAB icon from your applications folder to the trash. Empty the trash to reclaim the drive space used by MATLAB.
If you are using an Individual or Designated Computer license, you should also deactivate MATLAB before deleting it:

To uninstall Matlab completely you should first delete it from the Applications folder, then go to the Library and remove its service files from the following subfolders:
  • ~/Library/Application Support
  • ~/Library/Caches
  • ~/Library/Containers
  • ~/Library/Cookies
  • ~/Library/LaunchAgents
  • ~/Library/LaunchDaemons
  • ~Library/Logs
  • ~/Library/Preferences
  • ~/Library/PreferencePanes
Also, you can uninstall Matlab using the Lisence centre or a special uninstalller.

Even doing this these steps there are some settings and history that is kept. For example the MATLAB command history is visible even after these steps when one re-install the Application from the .dmg file - this is with R2020a. There are similar issues with installs on other OSs.
I would like to see the ability to purge all the installed files and cached information.

You can remove the preference directory as well to delete cache'd information.
In your documents folder, there could also be a MATLAB folder that you can delete.
If you are still experiencing this issue, please create a service request below.

MATLAB includes the Live Editor for creating scripts that combine code, output, and formatted text in an executable notebook. To uninstall MATLAB on a Mac, you can simply drag it to Trash but this will leave a mess of leftover junk.
To clean up MATLAB file extensions (including MATLAB, Simulink, Simscape, MuPAD, etc), user preferences and other orphaned data, open Finder > Go > Go To Folder > Enter ~/Library/Application/Support/MATLAB/
Search all the MATLAB files by digging into each folder. Most of them are stored in: Application Support | Caches | Containers | Frameworks | Logs | Preferences | Saved | Application State | WebKit
Or you can follow this simple MATLAB uninstall guide to get it done quickly.

There is an uninstaller come with the install.dmg. But you can just delete all the MatLab in Application folder.
