You can take the log of the data. There is even a function that will do it for you and plot it, semilogy():
fontSize = 22;
h= [2 5 6 8 3 4 2 3 5 6 1000 5 6 8 2 35 1002 1020 5 6 8 1050 ]
logh = log(h);
subplot(1, 2, 1);
plot(logh, 'b*-', 'LineWidth', 3, 'MarkerSize', 15);
xlabel('index', 'FontSize', fontSize);
ylabel('log(h)', 'FontSize', fontSize);
grid on;
subplot(1, 2, 2);
semilogy(h, 'b*-', 'LineWidth', 3, 'MarkerSize', 15)
xlabel('index', 'FontSize', fontSize);
ylabel('h', 'FontSize', fontSize);
grid on;
% Enlarge figure to full screen.
set(gcf, 'Units', 'Normalized', 'OuterPosition', [0 0 1 1]);
