Matlab suddenly wont open in Windows 10

Recently my matlab R2018a in Windows 10 couldn't open and got stuck in the splash screen. I tried everything mentioned here:
but i couldnt solve the problem. I then tried to start with -nodesktop in target line and it starts fine. I plotted something and it worked but when i tried to zoom this error was shown in the command line:
Cannot create 'matlabprefs.mat' because 'C:\Users\<username>\AppData\Roaming\MathWorks\MATLAB\R2018a' does not exist.
I ran the command folder=prefdir(1) and it returned the same path that is mentioned in the error, and then plotted something again and tried to zoom it and same error occured. I did everything mentioned in the above link for the preference folder and nothing works. I even reinstalled it but the same problem existed. My <username> folder name is in greek if that is of any importance, but i thought that wouldnt be a problem since it worked before. Any help is welcome.

Walter i did that and it didn't work.
Jan both commands returned zero, even after running prefdir(1). I tried to restore but the only available restorable state was after the problem occured.

I have a small update. I followed the instructions for changing the default preferences directory and matlab opened just fine, but when it opens it throws this warning:
Warning: Unable to create preferences folder in
C:\Users\<username>\matlab_preferences. Preferences folder location must be
writable. Using a temporary preferences folder for this MATLAB session.
That is the path of the folder i made manually. To change the default directory for preferences i followed these instructions:

What about using a User name for the operating system with ASCII characters only? If Matlab fails for Unicode characters, other programs might be affected also.

Call the Mathworks tech support number TODAY - before the weekend starts and you'd be down even more days. They will happily get you up and running immmediately and for free, even if it's a student version.
