Is it possible to plot a graph on Matlab version R2019a? My plot functions are grayed out and does seem to work. If it should work, what do I need to do to make it work?

You installed MacOS Catalina, I suspect. R2019a is not supported in Catalina. (R2019b has a series of known problems in Catalina, including sometimes not displaying some graphics.)
