how can i make use of sliding window to separate r,g,b channels?

good day all I am working on optic disc localization,i wanted to know ,how to implement sliding window technique using [80 80] pixels over an retinal image and with every moving window i would separate the r,g,b channels and obtain histogram of each channel

Another snippet which may be useful for you:
% Extract the individual red, green, and blue color channels.
redChannel = rgbImage(:, :, 1);
greenChannel = rgbImage(:, :, 2);
blueChannel = rgbImage(:, :, 3);
% Recombine separate color channels into a single, true color RGB image.
rgbImage = cat(3, redChannel, greenChannel, blueChannel);
