I want to output a graph in tabular form, meaning instead of seeing a xy plot with a line. I want to see the actual data with numbers in X and Y format.

Is there any way this is possible?

Try doc uitable:

simple example:

 a = magic(10);
  t = uitable('Data',[a(:,1) a(:,2)],'ColumnName',{'X','Y'},'RowName',{});
  % You can set a whole lot of other properties to suit your needs
