Hi Karen, do you mean that you'd like to make a contour plot? You can try this (from the docs for contour()):
Z = peaks;
[C,h] = contour(Z);
t_handle = clabel(C,h);
set(t_handle,'BackgroundColor',[1 1 .6],'Edgecolor',[.7 .7 .7])
