Try this:
% Extract the individual red, green, and blue color channels.
redChannel = rgbImage(:, :, 1);
greenChannel = rgbImage(:, :, 2);
blueChannel = rgbImage(:, :, 3);
rMinusB = 255 * mat2gray(double(redChannel) - double(blueChannel));
