Some functions are just m-files that you can edit to get a look at them (e.g., polyval.m). Others are compiled executable code that are proprietary and you cannot look at the source code (e.g., sin.m does not have the actual code for the function).

The official answer from Mathworks is that you can get a job with Mathworks.
My unofficial answer as someone who has never worked for Mathworks, is that an unconditional retainer of $US 2 million will get you a 15 minute meeting to start negotiations on the price for access to source code.
