Well, it depends on what you are trying to achieve.

griddedInterpolant()

surf()

Also, why do you want to do that in Matlab? There might be better options.

I think SfM-MVS is suitable method for your project. RealityCapture and ContextCapture Software are popular software for UAV and I think this software based on SfM. You can learn via this software how to reconstruct the 3D model and how to do the SfM.
