[pixelCounts, grayLevels] = imhist(grayImage);
minGrayLevel = min(grayImage(:));
maxGrayLevel = max(grayImage(:));
% or
minGrayLevel = find(pixelCounts > 0, 1, 'first');
maxGrayLevel = find(pixelCounts > 0, 1, 'last');
minCounts = min(pixelCounts(:));
maxCounts = max(pixelCounts(:));
