Hi, I want to perform morphological opeartion on this image erosion and dilation on rice grain kindly help me.I am a little bit confuse in forming the structure element which shape should i choose for rice grain.

Use imdilate and imerode.

Sir i am a little confuse in forming the structure element which shape do i choose for a rice grain and how it would form..so that this structure element would further used in dilation and erosion.

Depends on what you want to accomplish. Usually the 'disk' shape is good because it's the same size in all directions. In your case I think it would be fine, but in general the shape depends on the shape of the binary structures you're trying to get or remove.
