Try these:
meanGrayLevel = mean2(grayImage)
stdDev = std2(grayImage)
v = var(grayImage(:))

Thanks sir but my interest was to calculate all important statistical features by using like haralick function. Thanks

Not sure how anyone would have known that until now, but anyway, use graycomatrix() and graycoprops().
