I have Database with few categories generated from testes, i need to compare the new test data with the data base and identify to which category the new data belongs, is it possible to do this with MATLAB?

Example,

My database has moisture content over a certian time of different materials in drying process, I have measured moisture content of new material( un known) with the help of a sensor. My program must compare the new moisture conent profile with the data base and should indicate to which category it belongs.
