That is not how it works. What you can do instead is using ind2rgb to convert your gray scale image (which you got with rgb2gray) back to an RGB image again.

im_proc=rgb2gray(img);
im_proc=ind2grb(im_proc,colormap('winter'));
imwrite(im_rgb,new_image_name)
