As to how to use training data from excel: first import the data into MATLAB. Once you have the data in memory, the Fuzzy Logic Toolbox does not care where the data came from.
To read the data into MATLAB, see readtable() or xlsread(). If you have R2019b or later, you might be able to use readmatrix()
