How to model contact force of soft body (based on true geometry) for cutting operation.

Hi
My objective is to simulate cutting of soft bodies such e.g. food(vegetables), sponge, rubber etc with cutter/knife.
To start with I simulated cutting with very thin solid block (knife) and general flexible beam as soft body.
I tried to use spatial contact force for measuring contact force while cutting operation but since flexible beam is true geometry it cannot be used.
I am looking for pointers for how to measure contact force during cutting operation.
