Well I don't know you and I don't know how knowledgeable you are with image processing/Matlab/Calculus etc.
Personally I would do image segmentation (but the fact that my Master's thesis is about 1/3 related to image segmentation might bias me.).
You could always do:
choice = ceil(rand*3);
It stands about as good a chance of knowing what you want as we do.
