How can I call and run a MATLAB script post the completion of a successful build process?

1. You can make use of the SET_PARAM command property 'PostCodeGenCommand' to include the MATLAB script or function file as the one that needs to executed after build process. The function file can accept Build information object that contains all details on the build process. You can retrieve and add information to this objects if you wish using the post code generation files.

2. The other way is to make use of RTW (Real Time Workshop) hooks to include scripts or files at the end of the build process.
