how do I create a surface (surf) plot with a NX3 Matrix?
also how do i add a colorbar to this plot?

It looks really sloppy. How do i make it neater.
I would like price on one axis, quantity on the other axis and possibly net present value (npv) on the z axis

You can use other functions to fancy it up. Though it adds other objects - not sure if that's neater or messier. But you can use xlabel(), ylabel(), title(), test(), annotation(), axis(), grid(), set(), etc.
