I understand you want to count the objects(rocks) based on a specific color. It looks like you need to perform image segmentation to get the count of objects of specific color. Please refer to this answer (link) to a similar question.
You can also refer to this MATLAB File Excahnge submission which gives a demo to find objects of a certain color in an image.
