It can be done in a few different ways. One of them is, e.g.:
A = randi([10, 90],5, 3)
T = array2table(A, 'variablenames', {'V1', 'V2', 'V3'})
V1 = sort(T.V1, 'ascend');
T.V1 = V1
Or using the GUI as shown in the attached screenshot here:
