My ThingSpeak website is collecting data from sensors every 22 seconds.

When ThingSpeak has collected no data for 5 minutes, is it possible to get an email or notification? This will allow me to quickly solve the problem without losing much data.

Yes, this definitely possible. Have a look at the no data check section for the React App help.

Also you could write a MATLAB analysis to read multiple channels and see if they have updated recently, then use he Alerts service to send an alert. You can schedule that code to run regularly using the TimeCotrol app.
