How to save a matrix of an encoded image ?

Hello, i have being trying to implement diffrent losless comrpession techniques on matlab and the one problem that i havent figured out how to solve yet is how to save a matrix that i get from encoding an image ? do i save it as the matrix as a .mat file or what ? and is the size of the .mat file the actual size of the matrix ?
