How do I plotting a 3 column matrix

I have a 3 column matrix (3x140). I have 3 variable U, D and C and 140 responses. The values of U,D and C are typically expressed in percentages summing to 100%. Is it possible to draw a figure like this?

Yes it is possible. Search the Matlab file exchange for "ternary plot".
You will get multiple hits, such as this, which looks good:
