Interpolating with 3 variables

I am trying to interpolate values for a 3 variable dependent result. I tried using
interp3
but dependent variable data is not monotonic, they are 150 unique combinations of the three varaibles. This corresponds to 6 temperatures, 5 engine speeds and 5 engine loads . I can't get on top of this, any idea of how to index this function for this case?
