imds = imageDatastore('sindou','IncludeSubfolders',true,'LabelSource','foldernames');

We have imported all the images in the file together like this.

I would like to do a gabor filter on all of these images.

Have You tried Apply Gabor filter or filter bank to 2-D image - MATLAB imgaborfilt (mathworks.com) ?
