How do I create a 3D graph?

I'm attempting to create a 3D graph (surface contour plot) and I'm not sure where to begin. I have my data but I don't know how I should formulate my matrices to make it easiest. Also, what function should I use to create a surface contour plot? Thank You

I would start with the documentation on Contour Plots. Look through the possibilities to see how to use the plot that most closely meets your needs. Also look through the documentation for Surface and Mesh Plots for those that might seem appropriate for what you want to do.
Experiment with them to get the result you want.
