What interpolation means and how to do it

Hi,
I have X data of time (date format) and Y data of depth; I need to interpolate Z data of water temperature. What in simpler terms mean and how can I do it on Matlab?
Below my sets of data and a plot so far displaying depth against time.

Thanks both, I have read everything on Matlab, and I think I got how to create the meshgrid and apply the interp2 function, I just don't know how to do it with my (x) time variable, as it's got date and time in the format '04/07/2022 18.00'

You could use datenum to create the needed input format for interp2 - but it is not recommended to use it. It's just a quick and dirty approach.
