Then you can plot it in many ways. Examples

figure(1)

contourf(x,y,z)

colormap(jet)

surf(x,y,z)

colormap(jet)

surf(x,y,z,'EdgeColor','none'), hold on

surf(x,y,-z,'EdgeColor','none')
