If you are using MATLAB R2018b or higher version, you can follow the below MathWorks documentation link to change the documentation language, you need to install the chinese documentation in your system.
If you are using MATLAB R2018a or previous version then you can follow the below MathWorks documentation link to view the documentation in chinese.
