I have a rough idea in my mind how to create this but I was wondering how to put it in practice?

The impression I got was that you wanted a plot with continuously-updating data.
You can zoom in on parts of the plot by reproducing it in different figure objects and then setting the xlim and ylim properties appropriately for each of them.
If this is stilol not sloving it, please go into some detail in describing what you want to do.
