Has the Matlab 2025a documentation changed? I'm not able to access it via help anymore .

Trying to use the same help menu in order to search the documentation, but it just comes up with a localhost that has... nothing?

What's a way to verify I've installed the right toolboxes and don't have any issues with the new help style? 2023b was working fine, but I think the documentation architecture changed and is no longer accessible...

Use Settings -> Help -> Documentation Location -> Installed locally, and then click on "Install Documentation" . It might take a while to download.
You perhaps had started "Installed locally" but interrupted the download. When that happens, you can end up with MATLAB trying to use localhost: for the documentation but failing to find the locally installed documentation.
