Multi-Color Polar Plot Contour Based on Intensity

Hello all,
I'm trying to create a trace of a GPS satellite's position over my location, where the trace is multicolored with respect to the error at a given position. I have a data set with three values Azimuth, Elevation, Error.
I've found plenty of ways to plot on 2-D with x, y, and intensity. But I would like to do this with 2-D polar to generate a sort of skymap. Any suggestions?

I don't understand. I'm not using spherical coordinates/not working a surface.

Convert the polar coordinates to cartesian and pass those to pcolor as the X and Y coordinates, with the data values being the intensity data you want displayed, and colormap() according to the coloring you want for each intensity.
If your data at each location is RGB data then instead of pcolor(), use surf of those rectangular coordinates, passing your RGB data as CData and specifying that you want texturemap
