How do I detect large bubbles on the surface of a boiling liquid?

I've been studying machine vision system for automation of production of sugar from sap. As a background, the process simply involves heating the liquid sap to boiling, then turning off the heat and mixing the liquid up to crystallization once large-sized bubbles form on the surface of the boiling liquid. Now, I need to develop a MATLAB program for two things:
1. One that will detect the large-sized bubbles of a certain radius or higher, from captured image of the boiling process. A sample image may be viewed from this link: https://www.mathworks.com/matlabcentral/mlc-downloads/downloads/submissions/55438/versions/1/screenshot.jpg
2. One that uses the algorithm in (1) in real time, where the images are acquired from a video of the boiling process, also taken in real time.

Is there any prospect that the light source and/or camera could be moved, or that a different frequency could be used, or perhaps a pattern could be projected? For example it might be easier if a grid (red for example) were projected over it.
I wonder what it would look like in infrared ? I speculate that the bubbles would be slightly cooler.
