How to change 3D to 2D matrix for 365 data

I have 365 data (TEC1, TEC2, TEC3....TEC365) with the matrix 8x31x25. I want to change the matrix to 8x31 for all 365 data. I'm still new with matlab and with the my limited knowledge, I try to use eval.
for TEC = 1:365
varName = ['TEC' int2str(TEC)]; %# Create the name string
eval(['mean_' varName ' = squeeze (' varName (:,:,1) ');'])
end;
but it didn't work. can somebody please help me.
