I am trying to track growth of plant in its early stages. I was able to detect when the plant comes out of soil. I want to track its growth over time, I have temporal data (images at every 10 secs). Any tools or techniques that can come in handy.

If you already have the images on your machine, then you could use either Image processing Toolbox or Computer Vision System Toolbox in MATLAB to analyze the properties of your image.
