So I am trying to get the sensor values on pin TK0, but when I go to choose the pins on simulink I can only enter numbers. The pin map given is useless and I just have no idea what to do.

Have you seen https://in.mathworks.com/help/supportpkg/arduino/ug/pin-mapping-on-arduino-blocks.html?

TK0-TK7 are multiplexed to a single analog, try by providing number 6 in the block mask.
