I have this code:
subplot(4,2,1), imshow(c1, []), title('Piano del bit 1 * 2^[(n-1)]');
Why does not I put the (n-1) all high above number 2?

Because you need to use the correct LaTeX syntax:
title('Piano del bit 1 * 2^{(n-1)}')
