Could anyone please tell me syntax for the following expressions in "xlabel" in Matlab plot.

For the first case, use
xlabel('$\overline{Stress}_{xy}$', 'Interpreter', 'latex')
For second case use
xlabel('$\widetilde{Stress}_{xy}$', 'Interpreter', 'latex')
