According to the documentation at http://www.mathworks.co.uk/help/toolbox/physmod/hydro/ug/bq4d_8j-1.html, SimHydraulics assumes a constant fluid temperature throughout the simulation, and the temperature is set by the user. So, there wouldn't be any point to measuring the temperature in a hydraulic circuit.
However, the above link also says that R2012a SimHydraulics doesn't have the capability to model water supply and sewage systems when in fact it does. Make of that what you will.
