How to split test and train data manually?

I have 3 folders, I want the 2 folders for my training and 1 folder for my testing. But my code seems only to recognize the traindata set.

train = audioDatastore("C:\Users\aleo1\Desktop\Dataset",... 
    'IncludeSubfolders', true,...
    'FileExtensions', '.wav',...
    'LabelSource','foldernames')
test = audioDatastore("C:\Users\aleo1\Desktop\Dataset2",... 
    'IncludeSubfolders', true,...
    'FileExtensions', '.wav',...
    'LabelSource','foldernames')
[trainDatastore]  =(train);
[testDatastore] = (test);
