How can I use the publish() function to print variables as seen not in the command window, but in the workspace?

Not new to matlab, but i haven't used it for a few years, and now i'm a bit rusty. I'm currently trying to use the publish() function to generate a PDF from my program, but i've been asked to show the variables like they look in the workspace (in table format, like in excel), not like how they appear in the command window. Is there a way to print that out in the pdf, while also excluding the lines of code in the program (so only the results from executing the program)?
