How to create a waterfall plot with background intensity?

Hello, I am trying to creat a waterfall plot like the left figures
which consists of 1D-waterfalls and peak intensity information as a rainbow color,
but I have no clue how to create it.
I tried waterfall function and surface plot (right), but it doesn't seem to be the left figures.
My data are 201 (y value along the x-axis) by 50 (the number of plots, waterfall) array.
Could you give me any comment or intuition to solve this problem?
