How to modify colormap without using caxis()?

I'm trying to get the colormap in the below figure to even out so 60-100 aren't all the same colour. I've attempted to modify the colormap using both caxis([0 100]) and the colormap editor but have been unsuccessful. Can anyone give any advice please?

Try to make a MWE so we can run your code without any other dependencies and can reproduce your issue. It is easier to modify almost working code than writing code from scratch.

What kind of modification do you want to do on your colormap?
