I am starting a project using the Live Editor, and I would like to see some example of what other people have been able to do with. Is there somewhere I can find example live scripts?

You can find example live scripts (and run them online) in the Live Script Gallery:
https://www.mathworks.com/matlabcentral/fileexchange?utf8=%E2%9C%93&term=%22live+script%22
Additionally, if you search the MathWorks File Exchange with the following term:
tags:"live script"
you can find a variety of live scripts made by MATLAB users.
