P1 = arrayfun(@(S) S.Position(1), YourStructure);
P2 = arrayfun(@(S) S.Position(2), YourStructure);
or
pos = vertcat(YourStructure.Position);
P1 = pos(:,1);
P2 = pos(:,2);
