so where is the alphaShape and alphaTriangulation M functions or anything library hide in my software ?

They are built-in functions for which we don't distribute the source code. The alphaShape.m and alphaTriangulation.m files you saw contain help text for those built-in functions.

Then how to change and analysis this algorthims ?? any way to get source code of those functions?

If you have questions / concerns / requests for enhancements about alphaShape and/or alphaTriangulation, post them here in Answers and/or send them to Technical Support using the telephone icon in the upper-right corner of this page. [Bug reports and enhancement requests should definitely end up with Support so they can be entered into the database, though if you want to ask if something is a bug or a reasonable enhancement request asking on Answers first is reasonable.]
If you want to read and/or change the source code start here or perhaps contact your dedicated sales representative to see if there is a licensing option that gives access to the source code.
