Video processing in matlab

Hi, fellas.
I'm doing a GUI for live video processing and I'd like you to help me with two things:
1. How could I save the video from the moment the webcam starts streaming until it stops.
2. How can I fix the size of my interface, because my computer is smaller than the one I was initially working on.
