Update Change Working Directory Linux

My environment requires /tmp to be nodev, noexec, nosuid.
When I install matlab I have to use -tmpdir /usr/local/src for a tmp area.
For updates like R2018a_Update_6_glnxa64.sh how to I set the working directory to be something other than /tmp. I do not wish to unmount and mount /tmp to get around the issue as that involves a lot of documentation.
Please help as -tmpdir was not an acceptible option and the only options I see are -n -s -d=
